Most restaurant software is priced and built around seating. A cloud kitchen pays for table management, floor views and waiter flows it will never open, and still has to solve the problems it actually has.
Those problems are different. Orders arrive without anyone standing in front of you, so the identifier is a customer and a time rather than a table. Preparation has to be sequenced against when food leaves, not when a guest is ready. And demand is spiky in a way a dining room is not: forty orders can land inside twenty minutes.
How running a delivery-only kitchen works
- Publish the menu. The same digital menu, minus the table QR codes. Items can be marked unavailable the moment something runs out, which matters more without a waiter to explain.
- Take pre-orders with payment up front. A customer orders for a later time and pays in advance, so the kitchen is cooking against confirmed money rather than an intention.
- Orders land on the kitchen screen. Each with its items, quantities and the time it is needed, rather than a table number.
- Track through preparation. Pending, preparing, ready, served — the same states, used to sequence dispatch instead of service.
- Read the day by item. What sold and what it earned, which is the only feedback a kitchen with no dining room gets.
Why advance payment changes the operation
A pre-order that is paid for is a different thing from a booking.
An unpaid order can evaporate, so a kitchen either cooks speculatively and eats the loss, or waits for confirmation and delivers late. Advance payment removes the choice: the order is real, the money has arrived, and preparation can be scheduled against the time it is needed rather than the time it was placed.
For a kitchen with no walk-in trade to absorb the mistake, that is the difference between planning a shift and reacting to it.

Handling a spike
A delivery kitchen's load does not arrive evenly. Forty orders inside twenty minutes is normal, and it is where a system either helps or gets in the way.
Two things matter during one. The kitchen board has to show what has been waiting longest rather than what happens to be nearest, which the order states give you. And an item that has run out has to stop being orderable in the same moment it runs out, because there is no waiter to intercept it — a customer who has paid in advance for something you cannot make is a refund and a bad review, not a small problem.
Who this suits, and who it does not
It suits you if you cook for delivery and collection, want payment confirmed before you cook, and would rather not pay for floor management you do not use.
It suits you less if your orders arrive mainly through a delivery aggregator and you need them pulled into this system automatically. Scan2Plate does not integrate with aggregator platforms, so those orders would be entered here by hand. No. Orders from an aggregator platform are not pulled in automatically and would be entered here as they arrive. If most of your volume comes through aggregators, that manual step happens on every order, and it is worth weighing that before switching rather than after.
